- Step 1 a large handful of frisée
- Step 2 a large handful of wild rocket
- Step 3 a large handful of lamb's lettuce
- Step 4 a large handful of radicchio leaves
- Step 5 4 tbsp extra-virgin olive oil
- Step 6 juice of 1 lemon

Directions
- Step 1 Mix the rocket, frisée, lamb's lettuce and radicchio leaves in a large bowl. Drizzle over about 4 tbsp extra virgin olive oil, squeeze over the juice of 1 lemon, then grind sea salt and black pepper on top. Toss with your hands until all the leaves glisten, then serve.
